Cutting down on carbs is never a fun process. Believe me, I know. Especially if you’re just starting out. But, believe it or not, adding more fiber and protein into your diet doesn’t have to mean you’ll be eating just plain chicken and lettuce for the rest of your life.

I’m all about the thinking that food should be enjoyed. That’s why I always try to modify my favorite recipes and prepare them with whole ingredients so I can enjoy them as part of a clean eating lifestyle.

Salads can be a great healthy option for you, without a doubt. But, let’s be honest, you can easily start packing on unhealthy ingredients (i.e. processed salad dressings) or tons of ingredients that turn a healthy salad into a crazy high fat and calorie bowl.

Luckily, salads can be so much more than what you might be used to.

So, I decided to make an even healthier, but equally delicious version of a Taco Salad with Creamy Cilantro Lime Dressing.  Because tacos and salads need to be enjoyed — it’s a rule.

And you know what’s the best thing about this mason jar salad? Everything! If you don’t believe me, try it for yourself!

WHAT GOES IN A TACO SALAD?

Oh, the possibilities! I like variety so I always seem to pop in something new each time I make my Healthy Taco Salad, but recently I’ve been sticking to this recipe. I find the texture is just right and the different flavors compliment each other nicely. The Creamy Cilantro Lime Dressing adds a bit of freshness to it and just makes everything taste even better.

Let’s discuss the deliciousness, all packed into a mason jar:

IS TACO SALAD GOOD FOR YOU?

If you’re trying to eat clean and healthy, going for a taco salad instead of tacos is definitely a good choice. Not that tacos cannot be made healthy (see these chicken tacos, spicy shrimp tacos, and barbacoa tacos for more on this), but a salad is a salad, after all.

This Healthy Taco Salad with Creamy Cilantro Dressing is a balanced combination of healthy fats and proteins, like the lean ground beef and avocado, plus a lot of fresh veggies, making it a great salad that’s good for you and your tastebuds. This healthy taco salad will make sure you stay full for hours, making it a great lunch or dinner.

HOW TO MAKE A TACO SALAD

First things first, you have to prepare the taco meat. For this recipe we’ll be using lean ground beef so just follow these easy steps:

heat olive oil on medium-high heat in a skillet add diced yellow onions, minced garlic, lean ground beef and seasonings cook until the onion is tender and the meat well-browned, stirring frequently. once cooked, remove from the heat and allow the meat to cool.

While the meat is cooling, prepare your Creamy Cilantro Lime Dressing by mixing all the ingredients in a mixing bowl.

Then, you’re ready to assemble your Healthy Taco Salad!  I love adding this salad to a mason jar so it stores well int he fridge all week, but it can also be made in a bowl and tossed.

CAN I MAKE A TACO SALAD AHEAD OF TIME?

This Healthy Taco Salad is a great addition to your meal prep as it can be made ahead of time. Woot!  The only thing you need to pay attention to is that you store it properly in the fridge. I use a 1 quart mason jar to make sure the salad stores well in the fridge.

You place the salad dressing on the bottom of the jar and the greens at the top of the jar, which makes it so your greens stay fresh (read: not soggy or wilted at all) all the way up until you eat them.  Stacking all the ingredients in a certain order (dressing, hard vegetables, proteins, softer vegetables, cheeses, greens) make it so you can preserve the freshness of each of the ingredients until it’s time to pour it all out into a bowl and enjoy.

And, yes, you totally pour it out into a large bowl or plate to enjoy when you’re ready to get all the goods all mixed up and coated with the dressing – it WOULD be silly to eat out of the jar, I agree!

Later, you can just grab the mason jar with the salad from the fridge and there you go, lunch is served! It doesn’t get easier than that.

HOW LONG DOES A TACO SALAD LAST?

This had always been one of my favorite questions. Why? Because I love the answer! If stacked properly, a taco salad can last up to 5 days in the fridge. Yes, 5 days! Amazing, right?

If you’re making your taco salad ahead, make sure you stack the salad correctly. Start with the dressing on the bottom, followed by harder veggies, protein and then softer veggies, cheese and topped off with greens. Seal it tightly and it’s ready to go into the fridge.

For The Taco Meat: 1 tbsp. olive oil 1/2 yellow onion, (diced) 2 cloves garlic, (minced) 1 lb. lean ground beef 1/2 tsp. sea salt 1/4 tsp. black pepper 1/2 tsp. cumin For the Taco Salad: 1 cup grape tomatoes, (whole) 1 cup taco meat, (cooled (see recipe above)) 1/4 cup jack cheese, (shredded) 1 cup mixed baby greens 1/2 avocado, (diced (optional, when serving)) For The Creamy Cilantro Lime Dressing: 1/4 cup plain greek yogurt 2 tbsp. unsweetened almond milk 2 tsp. lime juice 1 tbsp. cilantro, (minced) 1 clove garlic, (minced) 1/4 tsp. sea salt

To prepare the taco meat, heat some olive oil over medium high heat in a skillet and then add diced yellow onion, minced garlic, lean ground beef, sea salt, ground black pepper, and ground cumin and stir to combine.

Cook, stirring frequently, until the meat is well-browned and the onion is tender, about 6-8 minutes. Once cooked, remove from the heat and allow to cool. To make the creamy cilantro lime dressing, combine plain Greek yogurt, unsweetened almond milk, freshly squeezed lime juice, chopped cilantro, minced garlic, and sea salt in a small mixing bowl and stir to combine. To assemble the mason jar salad, pour the creamy cilantro lime dressing into the bottom of a 1 quart mason jar, followed the whole grape tomatoes, the cooled taco meat, shredded jack cheese, and mixed baby greens. When you’re ready to serve, top just shake the contents of the mason jar out onto a bowl and then top with fresh avocado.

Strawberry Oat Muffins

I’d take these strawberry muffins over strawberry shortcake any day! They’re fluffy and full of fresh strawberry flavor, with a delightfully sweet crunch on top.

I like these muffins more than the average muffin, since they’re made with 100 percent whole grains, including whole wheat flour and old fashioned oats. They’re also sweetened with maple syrup, which offers some extra flavor that complements the strawberries and oats.

Greek yogurt rounds them out with a light sour cream-like tang. What more could you want in a muffin?!

I teamed up with Quaker to create this recipe. After a bunch of recipe testing, I’m pleased to report that you can add up to 1/3 cup old fashioned oats to any of my muffin recipes.

How to make frosé (frozen rosé)

Frosé is very simple to make: the hardest part is thinking ahead. If you can, whip up the frosé recipe the night before, then blend and serve the day of. Despite the name, it’s not just rosé that’s frozen: simply freezing rosé makes it bitter and flat-tasting. A frosé recipe includes sugar to offset the bitterness (usually made as a simple syrup), and strawberries to add some color and additional flavor.

What is all natural frosé?

To put the A Couple Cooks spin on frosé, we wanted a healthier frosé recipe that was pretty simple to make. We also wanted to keep the character of rosé intact. Many frosé recipes can be sickly sweet, so we decided to make a frosé with no refined sugar. Here we’ve used honey to make a naturally sweet frosé (you can also use maple syrup for vegan). There’s only 1 tablespoon for 6 drinks, which keeps the frosé recipe just sweet enough.

The kicker in this frosé recipe is that we found a trick: we add a splash of room temperature rosé when serving! This makes it just sweet enough (since freezing rosé dulls the sweetness). It also brings in a nice slushy texture.

Description

Wondering how to make frosé (frozen rosé)? This all natural frosé recipe is simple, refined sugar free, and tastes just like rosé!

Ingredients 1 750mL bottle rosé wine (one you like to drink; we like ours on the dry side) 8 large strawberries (about 1 1/2 cups ripe strawberries, halved), plus more for garnish 1 tablespoon honey (or maple syrup for vegan)
Instructions

Open the rosé and pour 2/3 cup into a glass measuring cup; set aside for when serving.

Remove the tops of the strawberries and cut them in half.

In a blender, blend the remaining rosé, strawberries, and honey until smooth and fully combined. Then pour the mixture through a strainer and into a covered baking dish.

Transfer the baking dish to the freezer and freeze at least 6 hours, or overnight. (The alcohol in the mixture will keep it a slushy texture instead of freezing solid.) Blend the mixture again until it comes to a fluffy texture.

To serve, place the blended mixture into a glass. Then pour a splash of rosé into each glass (this step is important: it gives the final texture and brings in the character of the rosé). If desired, garnish with strawberries and serve.

Would you look at that red, white and blue showstopper? I’ve been dreaming of this almond cake concept for months, and I’m sharing it just in time for your Fourth of July festivities. It’s my abstract, gluten-free version of a flag sheet cake.

This gluten-free almond cake is lightly sweetened with maple syrup (or honey), infused with fresh lemon flavor, and topped with creamy Greek yogurt and fresh strawberries and blueberries. It’s a winner!

The cake itself is tender and possesses an almost graham cracker-like flavor, thanks to the combination of almond meal and maple syrup. It’s not overtly sweet like boxed cake mixes, but it definitely tastes like a treat.

This beauty would be a dessert for any occasion (use any variety of seasonal fruit). It’s also wholesome enough to pass for breakfast or a mid-afternoon snack.

The best part? It’s very easy to make! No mixer required.

Lake Shasta Caverns Travel Guide

There are many activities to do on Shasta Lake including the stunning Lake Shasta Caverns. These natural caves are enormous and filled with stalactites and helectites formed over millions of years.

Over the memorial day break, our family took a quick trip to Redding California and visited nearby areas including Lake Shasta Caverns.  We desperately wanted to spend some time in nature as we spend the majority of our time in our house cooking and filming.  We missed hiking as a family since our Utah trip and it was perfect timing as Lassen Volcanic National Park was just opening their roads through the park that weekend.

Our family explored Northern California including Lassen Volcanic National Park, Mt. Shasta, and nearby areas and fell in love with the scenery and nature.

Lake Shasta Caverns Info

Lake Shasta Caverns were discovered in 1878 and opened as a public attraction in 1964.  Before we visited I didn’t have a high expectation as we’ve had been to the moaning caverns in the Sierras before and it was just 1 large cave.  We were also at Okinawa World recently with its long and expansive caves.  The good news is Lake Shasta Caverns didn’t disappoint and our family had a fantastic time.

How to get to Lake Shasta Caverns

If you are planning to visit from the Bay Area, we would not recommend a day trip as the cavern is located almost 3 hours from Vacaville without traffic.  For us, we left for the Redding area the night before and visited the caverns around 1 pm.

Lake Shasta Cavern Tickets (Important)

You can purchase your tickets for Lake Shasta Cavern online or in person, but if you do purchase your tickets online they do not “reserve” the spot for you.  It is a first come first serve practice so do get there with plenty of time for the time slot you’re shooting for.  When we visited, it was $28 for 16 years and older, and $16 for 3-15 years old.

Lake Shasta Caverns Ferry

After purchasing the cavern ticket in the gift shop, you will head down to the dock and ride the ferry across Shasta Lake.  It is a private ferry only meant for transporting cavern visitors.

It was drizzling the day we visited but the scenery on the lake was still beautiful.  The ferry ride took roughly 10 minutes to cross the lake.

After the boat docks on the other side of the lake, passengers will be ushered into buses.  There is no need to rush but do try to keep your group on the same bus as each bus will be divided into its own tour groups.  Our bus driver was super funny and kept everyone entertained during the 10 minutes to the top of the hill.

After waiting at the small structure for a few minutes, our group was rounded up and lead into the cave.  The path into the cave was completely pitch dark except for a string of dimly lit string light.  It added to the suspense and excitement.  Lake Shasta Cavern is a guided tour and each group is small enough so everyone could hear the guide’s explanations.

At the end of the entrance path, immediately we knew this was going to be a much better experience than the moaning caverns.  The first area we encountered had a long staircase heading up and you could see numerous cavities filled with helictites and stalactites all around us.

The pathways inside the cavern for visitors are paved and easy to walk around, however, they are not wheelchair friendly.

To see all of the caves, visitors will need to climb up steep flights of steps.  We can’t remember exactly how many but it was over 70 steps.  Keep this in mind if there is someone in your group that doesn’t do well with steps.

As you may know, Alex and I aren’t fully vegetarian. But we eat vegetarian about 90% of the time, so this A Couple Cooks website is full of our everyday healthy vegetarian recipes. Since we’re what we call flexitarian, when we fire up the grill for summer entertaining often Alex will just eat a real burger! However, I eat vegetarian recipes even more than he does (maybe 97% of the time), so typically I’d prefer vegetarian grilling ideas. There are lots of vegetarian grilling ideas that are outside of a bun (like these grilled nachos), but sometimes you just want a big burger, right? So we’ve created this easy veggie burger recipe for when you want to eat vegetarian at a summer barbecue. And we promise, cross our hearts, that this veggie burger doesn’t fall apart on the grill! In this recipe, we’ve featured Simple Truth Organic Garbanzo Beans and Kingsford charcoal for the grill.

What are your grilled veggie burger tips?

It’s actually kind of hilarious how many times Alex and I have made grilled veggie burgers that flopped. I think we might have grilled veggie burger PTSD, actually! The reason that it’s so difficult to make a veggie burger that doesn’t fall apart on the grill is that, newsflash: it’s not a meat burger! Molding together a bunch of vegetables and grains does not necessarily equal the consistency of a burger. Problems with grilled veggie burgers are that they’re too dry and crumble on the grill, or they’re too mushy, like the consistency of mashed potatoes. After 10 years of experimenting, we have some grilled veggie burger tips for you! Here are all our secrets to a veggie burger that doesn’t fall apart on the grill:

Rice: In this grilled veggie burger, we’ve used rice to make a firm texture. It also helps the visual appeal. Walnuts: We’ve also added some walnuts, again to create a firm texture. Chickpeas (garbanzo beans): Chickpeas are main veggie here; we mash them with a fork to keep some of their texture as well. Flour: The flour acts as a binder to hold everything together. You can use any type of flour, including gluten free flour if desired. Egg White: We tried to make this recipe vegan, but unfortunately it needed another binder! Egg white is the final secret ingredient to keep everything held together. (If you’re adventurous and want to try a vegan sub like flax egg, do so at your own risk!) Barbecue sauce: We painted our burgers with barbecue sauce to get a color and shine that looks similar to a beef burger.

To us, this easy veggie burger recipe is truly the best we’ve ever made. And we still can’t believe how beautiful it turned out! Ingredients

For the burger

1 cup white rice (2 cups cooked) 2 large garlic cloves 1 medium yellow onion 3 tablespoons olive oil, divided 1 cup walnuts 1 15-ounce can Simple Truth Organic Garbanzo Beans 3/4 cup whole wheat flour (or gluten free) 1 tablespoon cumin 1 1/2 teaspoons garlic powder 1 1/2 teaspoons onion powder 1 1/2 teaspoons kosher salt 1 teaspoon black pepper 1 egg white Barbecue sauce

To serve

Guacamole or other creamy sauce 1 tomato Lettuce leaves 6 hamburger buns (gluten free if desired)
Instructions

Make the rice according to the package instructions. If making the rice directly before grilling, quickly cool it by spreading the rice into a single layer on a sheet pan and placing it in the freezer for 2 minutes until it cools. Otherwise, you can make the rice in advance and refrigerate until using. 

Preheat a grill to medium heat.*

Mince the garlic and onion. In a large skillet, heat 1 tablespoon olive oil. Add the the onion and saute for 3 minutes, then add the garlic and saute for for 2 more minutes until golden and translucent. Remove from the heat.

Roll over the walnuts with a rolling pin until they are fine and crumbly.

Drain and rinse the garbanzo beans. Place them in the bottom of a large bowl and mash them with a fork. Mash until about 90% of the garbanzo beans are mashed; a few can remain whole.

Measure out 2 cups of the rice and add it to the bowl with the garbanzo beans. Then add the onion and garlic mixture, 2 tablespoons olive oil, walnuts, flour, cumin, garlic powder, onion powder, kosher salt, black pepper. Mix together, smashing any rice clumps so that everything mixes evenly. Stir in 1 egg white, then mix until everything comes together into a sticky dough.

Using your hands, form five or six 1-inch thick patties by firmly patting and squeezing the dough together (making 5 results in a very thick burger; making 6 makes moderate-sized burgers). Set the patties on a baking sheet or plate for grilling. Brush both sides of the burgers with olive oil.

Place the burgers on a grill and grill for 10 to 12 minutes on one side, until firm and grill marks appear. Gently flip the burgers and brush them with barbecue sauce. Grill for an additional 10 to 12 minutes on the other side, then serve immediately.

To serve, place the burgers on a bun, topped with guacamole or another creamy sauce, tomato and lettuce (or other burger toppings of your choosing).

Notes

*You can also bake this grilled veggie burger if it’s not grilling season! Preheat an oven to 375F, then bake for 30 to 40 minutes until evenly browned on both sides, flipping once. Brush both sides with barbecue sauce, then return to the oven for 2 minutes.
