When’s the last time you had a piña colada? Alex and I don’t drink them often, but since we’re on a homemade cocktail streak, we decided to give them a try. Turns out, homemade piña coladas are perfect for entertaining! They take only a few minutes to blend up, only require 5 ingredients, and taste so refreshing. They’re not only for the 1990’s or beach resorts, we promise! Alex and I just had a patio party with shrimp tacos and elote — and these piña coladas were the absolute perfect signature drink for the fun.

How to make this piña colada recipe

The piña colada originated in Puerto Rico; the name means “strained pineapple” in Spanish. It’s a drink of pineapple, rum, lime, and coconut, served either blended or with crushed ice. Some purists claim it’s most traditional with crushed ice: but it is popularly served blended, which is the method we decided on here!

There are lots of different methods for how to make a piña colada: some people use fancy ingredients like coconut cream or two types of rum. We wanted to keep our version simple but pure in flavor. How do you make a simple piña colada recipe? In a blender, blend up:

  • Frozen pineapple
  • White rum
  • Coconut milk
  • Lime juice
  • Maple syrup (optional)

Taste and see if you’d like to add a little maple syrup to add sweetness: we found that a splash was just enough to brighten the flavors even more. Serve garnished with a drink umbrella for maximum fun!

Make ahead and leftovers

The nice thing about the piña colada is that unlike some of our frozen alcoholic drink recipes, you don’t have to prepare anything in advance. (For example, our Frozen Margaritas and Frozen Sangria require freezing some ingredients the night before.) This makes it simple to whip up with no advanced notice, right before guests arrive.

It is not recommended to make this piña colada in advance, because it’s best when it’s freshly blended. If you do have leftovers that you want to save in the freezer you can, but the texture becomes icey when frozen. When you want to serve, you’ll need to blend it in the blender again with a bit of reserved coconut milk to get the texture back. So we recommend simply mixing it up when you need a batch!

Ingredients

  • 1 pound / 3 heaping cups frozen pineapple chunks
  • 3/4 cup white rum
  • 1 cup full fat coconut milk
  • 2 tablespoons lime juice
  • 1/2 tablespoon maple syrup (optional)

Instructions

  1. Place all ingredients in a blender and blend until smooth. Taste and adjust the sweetness as desired.
  2. Pour into glasses and garnish with drink umbrellas (required!).
