If you can eat an entire can of ice cream in one sitting, please raise your hand. I know I can. I try not to, but I know I can.

Ever since I decided to stick to eating clean, I knew I had to find a way to incorporate my favorite foods into my lifestyle or it was never going to be successful. Cheat meals are great and all, but they are rare and I need something I like that I can actually eat (almost) on a daily basis.

So, among other things, I started making healthy ice cream at home. Believe it or not, it’s much easier than it sounds. You don’t even need an ice cream maker.

Don’t believe me? Keep reading 🙂

Making ice cream at home is really simple and I LOVE how you know exactly what you’re eating. No hidden artificial sweeteners, no additives… Just clean, wholesome ingredients that will make your ice cream super flavorful.

If you want to make healthy ice cream at home, all you really need to do is swap the unhealthy, sugary ingredients for the equally flavorful, but healthier options.  Easy peasy.

HOW TO MAKE PEACH ICE CREAM

You can make healthy homemade peach ice cream without an ice cream maker. It’s mess-free, fuss-free, and it’s basically just tossing all the ingredients into the food processor and pulsing until smooth.

Once smooth, transfer your soon-to-be ice cream into a freezer-safe container and freeze for a minimum of 4 to 6 hours until mostly solid.

That’s really all you need to do.

HOW LONG DOES HOMEMADE PEACH ICE CREAM LAST?

Well, that really depends on your self-control. But, if stored properly, homemade ice cream can last for up to a month, allowing you to enjoy peach ice cream throughout the summer!

5 ripe peaches 2 14-oz cans full-fat coconut milk, (refrigerated) 1/2 tsp vanilla extract 1 tsp ground cinnamon 1/4 cup pure maple syrup 1 tbsp fresh lemon juice

Combine the ingredients in a food processor and process until smooth.  You can remove the skin from the peach if you’d like, but it’s not necessary and will get blended once frozen.

Transfer the mixture into a freezer-safe container and freeze for a minimum of 4-6 hours, until mostly solid.

When ready to serve, allow to thaw on counter for 5-10 minutes, then stir until creamy and smooth.
