Ultimate Grilled Veggie Burger
This Ultimate Grilled Veggie Burger was created in partnership with Kroger. All opinions are our own.

Are you ready for the ultimate grilled veggie burger? Alex and I have seen so many veggie burgers fall apart on the grill over the past 10 years. So we are beyond excited to share this recipe with you: a veggie burger that doesn’t fall apart on the grill and tastes delicious! There’s even a video! It’s part of our 6-episode Summer Barbecue Series hosted by Alex, me and our friend baking blogger Tessa from Handle the Heat. Alex, Tessa and I created six brand new summer recipes for you and the entire series is sponsored by Kroger as part of their #RedWhiteandBBQ summer resources. Three of the recipes are healthy vegetarian recipes from A Couple Cooks and three are Tessa’s delicious baked goods, each featuring ingredients we found at our local Kroger store. See our video below!

Ultimate Grilled Veggie Burger | A Couple Cooks Why make a grilled veggie burger?

As you may know, Alex and I aren’t fully vegetarian. But we eat vegetarian about 90% of the time, so this A Couple Cooks website is full of our everyday healthy vegetarian recipes. Since we’re what we call flexitarian, when we fire up the grill for summer entertaining often Alex will just eat a real burger! However, I eat vegetarian recipes even more than he does (maybe 97% of the time), so typically I’d prefer vegetarian grilling ideas. There are lots of vegetarian grilling ideas that are outside of a bun (like these grilled nachos), but sometimes you just want a big burger, right? So we’ve created this easy veggie burger recipe for when you want to eat vegetarian at a summer barbecue. And we promise, cross our hearts, that this veggie burger doesn’t fall apart on the grill! In this recipe, we’ve featured Simple Truth Organic Garbanzo Beans and Kingsford charcoal for the grill.

What are your grilled veggie burger tips?

It’s actually kind of hilarious how many times Alex and I have made grilled veggie burgers that flopped. I think we might have grilled veggie burger PTSD, actually! The reason that it’s so difficult to make a veggie burger that doesn’t fall apart on the grill is that, newsflash: it’s not a meat burger! Molding together a bunch of vegetables and grains does not necessarily equal the consistency of a burger. Problems with grilled veggie burgers are that they’re too dry and crumble on the grill, or they’re too mushy, like the consistency of mashed potatoes. After 10 years of experimenting, we have some grilled veggie burger tips for you! Here are all our secrets to a veggie burger that doesn’t fall apart on the grill:

Rice: In this grilled veggie burger, we’ve used rice to make a firm texture. It also helps the visual appeal. Walnuts: We’ve also added some walnuts, again to create a firm texture. Chickpeas (garbanzo beans): Chickpeas are main veggie here; we mash them with a fork to keep some of their texture as well. Flour: The flour acts as a binder to hold everything together. You can use any type of flour, including gluten free flour if desired. Egg White: We tried to make this recipe vegan, but unfortunately it needed another binder! Egg white is the final secret ingredient to keep everything held together. (If you’re adventurous and want to try a vegan sub like flax egg, do so at your own risk!) Barbecue sauce: We painted our burgers with barbecue sauce to get a color and shine that looks similar to a beef burger.

And how does the grilled veggie burger taste?
To us, this easy veggie burger recipe is truly the best we’ve ever made. And we still can’t believe how beautiful it turned out! It doesn’t taste exactly like meat, but the experience feels just like eating a burger and is incredibly tasty in its own way. Even better, it’s truly a veggie burger that doesn’t fall apart on the grill. How about you: would you try this grilled veggie burger recipe? Tell us in the comments below.

Description

Want vegetarian grilling ideas? Finally, here’s a delicious Grilled Veggie Burger that doesn’t fall apart on the grill, and our grilled veggie burger tips!

Ingredients

For the burger

1 cup white rice (2 cups cooked) 2 large garlic cloves 1 medium yellow onion 3 tablespoons olive oil, divided 1 cup walnuts 1 15-ounce can Simple Truth Organic Garbanzo Beans 3/4 cup whole wheat flour (or gluten free) 1 tablespoon cumin 1 1/2 teaspoons garlic powder 1 1/2 teaspoons onion powder 1 1/2 teaspoons kosher salt 1 teaspoon black pepper 1 egg white Barbecue sauce

To serve

Guacamole or other creamy sauce 1 tomato Lettuce leaves 6 hamburger buns (gluten free if desired)
Instructions

Make the rice according to the package instructions. If making the rice directly before grilling, quickly cool it by spreading the rice into a single layer on a sheet pan and placing it in the freezer for 2 minutes until it cools. Otherwise, you can make the rice in advance and refrigerate until using.

Preheat a grill to medium heat.*

Mince the garlic and onion. In a large skillet, heat 1 tablespoon olive oil. Add the the onion and saute for 3 minutes, then add the garlic and saute for for 2 more minutes until golden and translucent. Remove from the heat.

Roll over the walnuts with a rolling pin until they are fine and crumbly.

Drain and rinse the garbanzo beans. Place them in the bottom of a large bowl and mash them with a fork. Mash until about 90% of the garbanzo beans are mashed; a few can remain whole.

Measure out 2 cups of the rice and add it to the bowl with the garbanzo beans. Then add the onion and garlic mixture, 2 tablespoons olive oil, walnuts, flour, cumin, garlic powder, onion powder, kosher salt, black pepper. Mix together, smashing any rice clumps so that everything mixes evenly. Stir in 1 egg white, then mix until everything comes together into a sticky dough.

Using your hands, form five or six 1-inch thick patties by firmly patting and squeezing the dough together (making 5 results in a very thick burger; making 6 makes moderate-sized burgers). Set the patties on a baking sheet or plate for grilling. Brush both sides of the burgers with olive oil.

Place the burgers on a grill and grill for 10 to 12 minutes on one side, until firm and grill marks appear. Gently flip the burgers and brush them with barbecue sauce. Grill for an additional 10 to 12 minutes on the other side, then serve immediately.

To serve, place the burgers on a bun, topped with guacamole or another creamy sauce, tomato and lettuce (or other burger toppings of your choosing).

Notes

*You can also bake this grilled veggie burger if it’s not grilling season! Preheat an oven to 375F, then bake for 30 to 40 minutes until evenly browned on both sides, flipping once. Brush both sides with barbecue sauce, then return to the oven for 2 minutes.

Crispy Tonkatsu Donburi クリスピーとんかつ丼ぶり

When you serve super crunchy & juicy Japanese pork cutlet over a bed of steamed rice and shredded cabbage, you get this Crispy Tonkatsu Donburi. A rice bowl that will get everyone to the kitchen table in seconds! Drizzle with Japanese mayo and tonkatsu sauce as you like.

When I was little, I wasn’t a big meat eater and I had a hard time swallowing a big chunk of meat. As attentive and amenable as a mom can be, my mother made this Crispy Tonkatsu Donburi (クリスピーとんかつ丼ぶり) instead of regular Tonkatsu for me. Even though I have longer any problem chewing my meat, I continue to make this dish to my family as the cutlets have a lighter and crispier texture which we enjoy very much.

“Shabu Shabu Pork” Meat for Crispy Tonkatsu Donbiri

Tonkatsu is usually made of a piece of thick cut pork chop, breaded and then deep fried. To make ultra crispy tonkatsu, the trick is to stack up a few thinly sliced pork loins to make thin-cut meat. These thinly sliced pork loins are specifically prepared for “shabu shabu” which is a type of Japanese hot pot dish. You can find them at Japanese or Asian grocery stores and look for packages like the one pictured below where they are labeled as “for shabu shabu (しゃぶしゃぶ用)”.

Shabu Shabu Pork (sliced)

Using thinly sliced pork is much more economical than using a pork chop because you don’t need as much meat for one serving.

Difference between “Pork Chop Tonkatsu” and “Shabu Shabu Tonkatsu”

Both Ton (pork) Katsu (cutlet) are equally delicious. The difference comes down to the matter of preparation and textural styles. Tonkatsu made with shabu shabu meat is thinner and crispier, and it cooks a lot faster too.  You will only need a very small amount of oil to deep fry, so it’s much easier to clean.  Regular Tonkatsu is juicier and more satisfying as you bite into the thick juicy meat. When I prepare regular Tonkatsu, I usually give the piece of pork chop some trimming and light pounding before coating it with egg mixture and the panko breadcrumb. With the shabu shabu meat, you don’t need to trim or pound the meat at all.

If you have young children at home, this thin-cut style tonkatsu will be their favorite. It is simple enough for any busy parents to make when the kids ask for fried food. It is also a good choice if you prefer to cook with less oil. Follow the steps in the recipe, you will get some really juicy tontaksu with an irresistible crust. Get your steamed rice ready in the bowl, pile with a bed of shredded cabbage, and then place the tonkatsu on top before you drizzle in the sweet brown sauce. I like to serve this Crispy Tonkatsu Donburi alongside with miso soup, but that’s optional.

Crispy Tonkatsu Donburi

  • ¾ lb thinly sliced pork loin ((340 g))
  • Freshly ground black pepper
  • Kosher salt
  • ½ cup all-purpose flour ((60 g))
  • 2 large eggs ((beaten))
  • 1 cup panko (Japanese breadcrumbs) ((60 g))
  • neutral flavor oil (vegetable, canola, etc)
  • 2 leaves cabbage ((cut into julienned strips))
  • Japanese mayonnaise
  • Tonkatsu sauce ((See Notes for homemade recipe))
  • Pickled red ginger ((Kizami Shoga) (to garnish, optional))
  • green onions/scallions ((to garnish, optional))
  1. Gather all the ingredients.

  2. Sprinkle salt and pepper on the meat. Then dip each slice of meat into the flour first, then dip in egg, and finally coat it with Panko.

  3. In a large non-stick frying pan, heat ½ inch of oil on medium high heat. Check How To Deep Fry Food if you are not familiar with deep frying techniques.

  4. When it’s hot, put 2 slices of the meat. Make sure you place it flat. Turn over when the bottom side is browned.

  5. When both sides are cooked and golden brown, remove the meat from the oil and place it on paper towels.

  6. Serve rice in a Donburi bowl and spread cabbages over the top. Crisscross the cabbage with Japanese mayonnaise.

  7. When Tonkatsu cools down a bit, cut it into half inch strips crosswise. Place the meat on top of cabbage and drizzle with a bit of Tonkatsu sauce. Enjoy!

How to Make Homemade Soda + 5 Easy Caffeine-Free Homemade Soda Recipes
How to Make Homemade Soda + 5 Easy Caffeine-Free Homemade Soda Recipes

Ever wondered how to make homemade soda?  Discover my favorite recipes for fruity Caffeine-free homemade sodas, made from fresh fruit and without any artificial sweeteners.  The perfect soda replacement for a healthy lifestyle!

Caffeine-Free Homemade Sodas | Discover my 5 favorite recipes for fruity Caffeine-free homemade soda, made from fresh fruit and without any artificial sweeteners, including Strawberry Soda, Orange Soda, Lemon Lime Soda, Grape Soda and Blackberry Soda | A Sweet Pea Chef

A while back, I shared the 7 steps I took to finally quit sugar. Staying as far away from soda, even the diet kind was a big part of it. Yes, you know it’s not that good for you, but we all crave a tall, ice-cold glass of a sweet drink every now and then.

Sure, a glass now and then won’t do you much harm, but as soon as those hot summer days start rolling in, it can be hard to stop at just one glass.  Then, the one-time treat becomes a habit and you’re hooked.

An overhead image of a blender with strawberry puree for the Homemade Strawberry Soda.

In order to avoid the temptation, you could start by avoiding that aisle in your local supermarket.  Another option is to make make your own homemade soda.

Believe it or not, it’s actually super easy to make homemade soda. You only need a few basic ingredients, including your favorite fresh fruit.  I love that, when you’re making homemade soda, you can control the sweetness. Now, you can enjoy a tall glass of refreshing fizzy bubbles without the artificial sugars, colors, and preservatives.  Woot!

Homemade soda is much healthier for you, as you can use real fruit and also experiment with flavors. Start by making my favorite 5 Caffeine-Free Homemade Soda recipes!

An overhead image of a kitchen counter with a mesh strainer and a glass pitcher with freshly squeezed and strained orange juice for the Caffeine-free Homemade Orange Soda.

HOW TO MAKE HOMEMADE SODA

Making this fizzy fruity refreshment at home is quite simple, really. Plus, homemade soda is so much healthier than regular soda and you can make it to your own liking.

The key ingredients of these homemade soda recipes are (1) fresh fruit “syrup” and (2) seltzer water.  We will be using fresh fruit and a simple syrup made from raw honey and water to sweeten the soda.  To make your honey simple syrup, just combine some raw honey with water and cook in a pan over medium-high heat until the honey is dissolved, and then set aside to cool.  Easy peasy.

A side image of five glasses each with juice made from fresh fruit including strawberry juice, orange juice, lemon lime juice, grape juice and blackberry juice for the Caffeine-free Homemade Sodas.

Next, comes the fresh fruit. Depending on the fruit you’re using, you’ll either need to juice it (lemons, lime, oranges…) or add them to a blender and chop them (grapes, strawberries, etc.).

Once you’ve got the fruit broken down, you can strain it using a fine mesh strainer.  You could leave the pulp in, but the soda will have a different texture.  Then, transfer the fruit syrup to a bottle, add seltzer water, and any simple honey syrup to sweeten.  Seal the bottle and place it in the fridge to cool.  You could also just drink it right away over ice, if you prefer.

HOW TO REMOVE CAFFEINE

One of the best things about this homemade soda is that it is caffeine-free.  I love having this sweet drink later in the evening, at times when I really don’t want to have any caffeine.  I’ve found it difficult to find low calorie, unprocessed, caffeine-free soda options out there so making these sodas has been a great way to remove caffeine from my evening and still enjoy a fizzy beverage.

A close up of a glass of Caffeine-free Homemade Grape Soda made from fresh grapes, raw honey simple syrup and seltzer water, served with ice cubes.

HOW TO STORE HOMEMADE SODA

Before we get started, we need to talk bottles.  While you could make these sodas right when you want them and pour them over ice, you can also prep them ahead, which is what I prefer so I have them ready in the fridge when I want a drink.

I’m using these sealable bottles and I can leave the link for you in the description below.  If you dob’t have something that will seal it tightly enough to keep in the bubbles, you can just wait to add the seltzer water until it’s time to drink.

A side image of bottles of carbonated water you can use to make Caffeine-free Homemade Soda including Seltzer Water, Sparkling Mineral Water and Club Soda.

WHAT’S THE BEST SODA WATER FOR HOMEMADE SODA?

For the carbonated water, you can use club soda, seltzer water, or sparkling mineral water — they all have bubbles and will work. I like using Seltzer (Sparkling Water) most because it’s just plain water that has been carbonated, but is (usually) lacking in minerals and any added flavor.  That being said, any of them will work fine and you can experiment to see what tastes best to you.

Caffeine-Free Homemade Sodas

Discover my favorite recipes for fruity Caffeine-free homemade sodas, made from fresh fruit and without any artificial sweeteners. The perfect soda replacement for a healthy lifestyle!

Simple Honey Syrup 2 cups water 1/4 cup raw honey Homemade Strawberry Soda 1 lb. strawberries ((to yield a minimum 1/2 cup juice)) 1/2 – 1 liter seltzer water Homemade Orange Soda 2 oranges ((to yield a minimum 1/2 cup juice)) 1/2 – 1 liter seltzer water Homemade Lemon Lime Soda 4-6 lemons ((to yield a minimum 1/3 cup juice)) 1-2 limes ((to yield a minimum 3 tbsp juice)) 1/2 – 1 liter seltzer water Homemade Grape Soda 1/2 lb grapes ((to yield a minimum 1/2 cup juice; I used seedless black grapes)) 1/2 – 1 liter seltzer water Homemade Blackberry Soda 1 1/2 cups blackberries ((to yield a minimum 1/2 cup juice; I used seedless black grapes)) 1/2 – 1 liter seltzer water
For the Simple Honey Syrup:

Combine water with raw honey and cook over medium-high heat in a sauce pan until the honey is dissolved, then allow to cool. Set this aside because we’ll be using it in a little bit.

For the Homemade Strawberry Soda:

Add fresh strawberries to a blender and quickly chop them to break them down.

Then transfer the blended strawberries to a fine mesh strainer to press through the liquid into a bowl below. Repeat with the remaining strawberries until you have all the condensed strawberry juice in your bowl. Then, add that strawberry juice to the bottom of our bottle. Next, slowly add the seltzer water to the bottle, almost all the way up to the top. Then add a little of our raw honey simple syrup to sweeten the drink – you can taste at this point and decide how much you need.

Continue to fill almost all the way to the top with your seltzer water and then seal bottle and place in the fridge to get nice and cold.

For the Homemade Orange Soda:

Juice the oranges to get fresh orange juice. You can either strain the pulp from this juice or leave it as is. To strain it, press the juice through a fine mesh strainer.

Then, add the orange juice to the bottom of the bottle or glass.

For the Homemade Lemon Lime Soda:

Juice the lemons and limes.  To strain it, press the juice through the fine mesh strainer.

Then, add that lemon and lime juice to the bottom of the bottle or glass.

Next, slowly add the seltzer water to the bottle, almost all the way up to the top. Then add a little of our raw honey simple syrup to sweeten the drink – you can taste at this point and decide how much you need. You’ll probably need to add more of the simple syrup in this soda than the others, since the lemons and limes are less sweet naturally.

Continue to fill almost all the way to the top with your seltzer water and then seal bottle and place in the fridge to get nice and cold.

For the Homemade Grape Soda: Ad fresh black grapes to a blender and quickly puree them. You can use any grapes, but I find black grapes to give the best color and flavor. Then transfer the blended grapes to a fine mesh strainer to press through the liquid into a bowl below. Repeat with the remaining grapes until you have all the condensed grape juice in your bowl.

Then, add that grape juice to the bottom of the bottle or glass.

And, slowly add the seltzer water to the bottle, almost all the way up to the top. Then add a little of our raw honey simple syrup to sweeten the drink – you can taste at this point and decide how much you need. The grapes are already pretty sweet so you wont need to add much simple syrup at all. Continue to fill almost all the way to the top with your seltzer water and then seal bottle and place in the fridge to get nice and cold. For the Homemade Blackberry Soda:

Add fresh blackberries to a blender and quickly puree them.

Then transfer the blended blackberries to a fine mesh strainer so we can press through the liquid into a bowl below. You may need to add a little water to help it out in case it get’s too thick. Repeat with the remaining blackberries until you have all the condensed blackberry juice in your bowl.

Then, add that blackberry juice to the bottom of the bottle or glass.
